I first saw these amazing creations whilst on holiday over the summer and thought they were the coolest things I had ever seen! I knew that as soon as we had nailed the recipe for normal Jelly Shots. I had to perfect this unique presentation and upload it for you guys as quickly as possible!

As you can see in the beautiful picture above, the effect is fantastic – and they’re so easy to make! The recipe below should make approximately 30 slices of ‘Watermelon’.


135g Packet of Hartley’s Raspberry Flavoured Jelly
6-8 Limes
280ml Boiling Water
100ml Chilled Vodka
180ml Chilled Water


Step 1 – Cut all of the Limes in half length ways.

Step 2 – Use a small knife to score around the edge of the pulp.

Step 3 – Scoop out the pulp with a small spoon and discard it.

Step 4 – Rinse and clean the remaining rinds then put them to one side.

Step 5 –  Cut the tablet jelly into cubes.

Step 6 – Put the jelly cubes into a large bowl and add the boiling water.

Step 7 – Stir until all the jelly cubes have dissolved.

Step 8 – Add the vodka and cold water and stir again.

Step 9 – Pour the mixture into the Lime rinds, then put them in the fridge.

Step 10 – Once the jelly has set, cut the rinds in half again.

Step 11 – Add passionfruit seeds to make them look like fresh slices of watermelon!

Step 12 – For something different, try using lemon rind with different jelly flavours!
