It’s hard to beat the classic Pimm’s cocktail on a hot summer’s day, but we think this iced tea version definitely takes it to the next level! Pimm’s Iced Tea is incredibly easy to make, and perfect for summer parties with friends and family as you can double the recipe before making it all in advance!
400ml Pimm’s No. 1 Cup
100g Caster Sugar
100ml Fresh Orange Juice
50ml Fresh Lemon Juice
24 Mint Leaves
4 English Breakfast Tea Bags
Step 1 – Place the Tea Bags, Caster Sugar and Mint Leaves in a large saucepan.
Step 2 – Add 1 litre of freshly boiled water and leave to diffuse, stirring regularly.
Step 3 – Remove and discard the Tea Bags after 15 minutes, then leave to cool.
Step 4 – Pour the cooled contents into a large pitcher and remove the Mint Leaves.
Step 5 – Add the Orange Juice, Lemon Juice and Pimm’s, and place in a fridge to chill.
Step 6 – Once chilled, serve in highball glasses or mason jars with plenty of Cubed Ice.
Step 7 – Garnish with slices of Orange, Lemon and Strawberries, and any remaining Mint Leaves.
