So many versions of the Peach Fizz exist that attempting to write a history or origin story for the cocktail seems ridiculous. It appears that almost any spirit can become a legitimate base for the versatile peach flavour, but the inventiveness always seems to be cut short when it comes to naming the drink! Indeed, this isn’t on the list of IBA Official Cocktails so that gives any budding mixologist plenty of artistic license to make it their own!

The version that I’ll be making in this recipe has a gin base, though vodka can be used instead. I’d recommend using Hayman’s London Dry Gin, as its excellent blend of botanicals and versatile palate make it a perfect foundation to build upon. The signature ‘peachiness’ will come from The Bitter Truth’s Peach Bitters – a standout flavour from their great lineup. I’ve kept things simple here, though feel free to experiment with muddled peach or fresh fruit juices to create your own concoction!


50ml London Dry Gin
4 Dashes Peach Bitters
25ml Soda Water
25ml Fresh Lemon Juice
1tsp Caster Sugar
Cubed Ice


Step 1 –  Fill a mixing glass with Cubed Ice.

Step 2 – Add the Gin, Peach Bitters, Lemon Juice and Caster Sugar.

Step 3 – Shake thoroughly using a Boston Shaker.

Step 4 – Fill a highball glass with Cubed Ice.

Step 5 – Using a Hawthorn Strainer, pour the drink over the ice.

Step 6 – Top up with the Soda Water, gently stir and enjoy!
