100ml Soda Water
50ml White Rum
1/2 Fresh Lime
12 Fresh Mint Leaves
2tsp Caster Sugar
Crushed Ice


Step 1 –  Cut the lime in wedges and throw ‘em in a large highball glass.

Step 2 – Add the sugar and muddle.

Step 3 – Add the mint leaves and muddle lightly again.

Step 4 – Throw in half the crushed ice and the Rum, stir it all well to dissolve the sugar.

Step 5 – Top up with more crushed ice and soda water.

Step 6 – Stir well again and garnish with a fragrant sprig of fresh mint.
